We recognize food as a language that expresses our cultural heritage




The casale does not have a restaurant, other than for breakfast, which is served by Anna and Gabriele.  Upon request, we can provide for pic nic lunch and evening meals, or we will be happy to suggest you local restaurant and wine cellars in the surrounding area. 
For those wishing to gain a solid grounding in the basics of Umbrian and Roman cooking, the doors of our kitchen are always open.  At our various cooking classes, available by reservation, you can work away at the stovetop and ovens together with Chef Gabriele, who will be happy to share his favourite recipes with you. Our aim is to preserve the myriad traditions of our table and culture.
These are some of the dishes we prepare during our cooking courses:



  • Lasagne, cannelloni e ravioli (Home-made pasta, including specialities such as lasagna with meat sauce or with radicchio; cannelloni with fresh ricotta and zucchine; artichoke ravioli and other famous pastas such as carbonara, all'amatriciana, cacio e pepe)
  • Risotto alla zucca, alle arance, al radicchio (with pumpkin, orange, or radicchio)
  • Misto di verdure ripiene (Stuffed vegetables)
  • Carciofi alla romana (Roman-style artichokes)
  • Melanzane alla parmigiana (Eggplant parmesan)
  • Abbacchio alla romana (Roman-style lamb)
  • Cinghiale al tegame (Stewed wild boar)
  • Coniglio in umido alle olive ed erbe aromatiche (Rabbit with olives and herbs)
  • Involtini di peperoni farciti al sapore mediterraneo (Mediterranean stuffed peppers)
  • Polpette aromatiche e vegetariane agli spinaci (Meatballs or vegetarian 'meatballs' with spinach)
  • Spezzatino di maiale con carciofi (Pork with artichoke)
